بررسی الگوهای رفتاری مربوط پذیرش سیستم تجزیه تحلیل خطر در نقاط کنترل بحرانی در صنایع غذایی استان خراسان رضوی

چکیده

در این مطالعه با توجه به اهمیت اصل سلامت در تولید و فرآوری محصول به بررسی الگوهای رفتاری صنایع غذایی در رابطه با پذیرش سیستم تجزیه تحلیل خطر در نقاط کنترل بحرانی با استفاده از الگوی لاجیت چندگانه پرداخته شده است. اطلاعات از طریق تکمیل 80 پرسشنامه از واحدهای تولیدی صنایع غذایی استان خراسان رضوی به روش نمونه‌گیری تصادفی طبقه‌بندی شده در سال 1393 جمع‌آوری شد. نتایج حاصل از تخمین مدل لاجیت چندگانه نشان از تأثیر مثبت و معنی‌دار تجربه مدیریتی و استفاده از نوآوری و همچنین تأثیر منفی و معنی‌دار شاخص محدودیت فنی تولید و شاخص محدودیت‌های دانش فنی بر احتمال قرارگیری واحدها در گروه پذیرش کامل سیستم HACCP (اخذ گواهینامه و مستقر نمودن این سیستم) نسبت به گروه پایه (عدم پذیرش سیستم HACCP) می‌باشد. همچنین نتایج نشان از تأثیر مثبت و معنی‌دار تحصیلات مدیر و استفاده از نوآوری و تأثیر منفی و معنی‌دار شاخص محدودیت فنی تولید و شاخص محدودیت‌های دانش فنی بر احتمال قرارگیری واحدها در گروه پذیرش نسبی (مرحله تدوین طرح و مستندات و یا در حال استقرار سیستم HACCP) نسبت به گروه پایه می‌باشد. با توجه به یافته‌ها حمایت از واحدهای تولیدی کوچک مقیاس، برگزاری کلاس‌های ترویجی و الگو قرار دادن مدیران نمونه، شفاف‌سازی مزیت‌های استقرار سیستم HACCP و وضع قوانین منسجم و انعطاف‌پذیر با توجه به شرایط واحدهای تولیدی به برنامه-ریزان این عرصه پیشنهاد شد.
