Thus, the stability and regulation of market equilibrium prices of these products and creating permanent prices are traditional concern of policy makers. Always Meat product had been the most important and essential products for Iranian society. In present research, demand functions of Meat products estimated in urban region of Mazandaran province in term of 1988-2013. After coefficient test, results denoted that between the four systems demand IROOT, CBS, AIDS and INBR, only the inverse demand system NBR (INBR) is consistent with research data. Results show that INBR system is compatible system according to data. Also compensatory and non-compensatory cross elasticity’s show that all type of meat are substitution. According to Scale elasticity, Beef is a Luxury product and Chicken and Aquatic Meat are normal and essential product. نوسان‌های قیمت مواد غذایی، یکی از دشواری‌های تاریخی اقتصاد ایران بوده که نارضایتی در بین تمامی گروه‌های جامعه و بدنبال آن، به چالش کشیدن مسئولان و دولتمردان را در پی داشته است. از اینرو، ثبات و تنظیم بازار این محصولات و ایجاد قیمت‌های متعادل برای آنها یکی از نگرانی‌های معمول سیاست‌گذاران است. محصولات گوشتی همواره جزء محصولات مهم و ضروری برای افراد جامعه ایرانی بوده است. در تحقیق حاضر، سیستم‌‌‌ توابع تقاضای محصولات گوشتی برای گوشت سفید (مرغ)، گوشت قرمز (گاو) و گوشت آبزیان (ماهیان) در مناطق شهری استان مازندران در قالب سیستم تقاضای ترکیبی معکوس (SIDS) طی دوره زمانی1392-1367 برآورد شده است. پس از آزمون ضرائب، نتایج مشخص کرد که از بین 4 سیستم تقاضای IROT، ICBS، IAIDS و INBR، تنها سیستم تقاضای INBR با داده‌های تحقیق سازگار است. همچنین کشش‌های جبرانی و غیرجبرانی متقاطع نشان از جانشینی انواع گوشت دارد. بر اساس کشش مقیاس، گوشت قرمز محصولی لوکس و گوشت سفید و آبزیان محصولی نرمال و ضروری است. https://www.iranianjae.ir/article_20291_93ec3bccd20f1403374ea7636b10f56d.pdf
