Abstract
Seafood and fish products are one of the types of healthy foods that, unfortunately, are consumed less than expected in Iranian society. One of the main reasons for this lack is the fear of unhealthy types of healthy fish in Iran. Therefore, the present study intends to examine the supply chain of healthy farmed trout in Tehran and, considering the changes in cost, income, cost price and demand for this product, simulate the supply chain of healthy fish under conditions where it is grown healthily and with minimal use of fertilizers, pesticides and chemical drugs. In this regard, using the views of 45 producers, 3 wholesalers, 27 retailers, and finally 598 consumers in 2022 and a mathematical programming model with the aim of maximizing profit, the supply chain of healthy farmed trout in Tehran was simulated in 10 scenarios. The optimal share of healthy fish sales from the producer to the wholesaler will be 44 percent, to the consumer 33 percent, and to the retailer 23 percent. The value of the objective function, which is the chain's profit from the producer's perspective, is equal to 16,238 million rials, of which 27,791 million rials are related to costs, 15,349 million rials are related to revenues from selling products to consumers, 18,360 million rials are related to revenues from selling products to wholesalers, and 10,319 million rials are related to revenues from selling products to retailers. It is recommended that producers in the fisheries and fish farming sector consider raising healthy fish, given the greater profitability of healthy fish compared to regular fish.
